  November 20, 2023 - Opened yesterday, stoppered overnight with plenty to retaste and well-maintained CO2. January 2018 disgorgement, 60% Pinot Noir + 40% Chardonnay. Dosage is 3 gms. The nose on this reminds me of the wines coming out of Marie Courtin, much like Efflorescence which is Pinot Noir. Just a little bit of gold color. Some white pepper on the aroma, and some remnant of older wood (?) with toasted bread. This is anchored by zesty green and yellow apple, along with some lemon, akin to what you might taste in a lemon sorbet. Not so much a brisk citrus but one that is more fresh with a candier-like edge. The finish remains squarely an expression of apple, with some grapefruit shading it to add freshness. If you really let this relax and shed the chill, then you'll find a caramel apple note in the finish, which is nice.

  July 19, 2022 - Sommelier Scholarship Fund Tasting (Popina - Brooklyn NY): Walk around tasting. Floral and peach with apple and lemon curd, so much here. Wonderful textures. This seems like mostly Chardonnay to me, but I am told 60% Pinot Noir. Very good now.

  October 11, 2020 - Delicious with precision and tasty fruit. Very vinous, with tiny almost imperceptible bubbles. Very special and remarkable champagne. My first bottle from Savart but hopefully more to come...
