    January 7, 2021 - At the five year mark, this still is quite youthful both in appearance and nose. Black and blue fruits on the nose, a bit of herbs but not much complexity. On the palate, it feel smooth, quite silky, not that much grip but acid is elevated for Cabernet. It drinks like a merlot with almost as much acid as a pinot. I'm going to let my next bottle age a little to see how this goes. It should have enough acid to gain some complexity.
