September 30, 2019 - First sips were very austere, not surprising for an extra brut. Once I got used to the dryness, subtle nuttiness came out. Toasted bread. I wish I had more bottles, because I think this really needs several more years in the cellar to flesh out and balance the acidity. Good, but could be great in time.
