    August 8, 2012 - Indescribable. So fragrant but there is nothing in this bouquet that I can describe even relative to other very old Bordeaux. What comes after tertiary? Quarternary? What comes after that? It smells savory and antiquey but not "old." And there is a serious richness and concentration to the material here. It has a sappy grip that's almost more like old Burgundy but it's thicker. It kind of reminds me of some of the old Vallanna Spannas in the way that its density seems to bespeak something that just transcends time. Did it start out life as dense as asphalt? Did it build in strength as it aged, reducing like a demi-glace instead of having the fat melt away? It doesn't so much feel like mere concentration as that term is usually thrown around. It's more like some kind of life force, which may account for why despite having all of the intrigue of something that's had over a century of introspection it has a vividness, boldness, and sheer presence that seems absolutely ageless, time maybe having polished some of its edges without doing anything to fade its sheen or erode whatever dense stuff this is made of at its core -- because for all that aged intrigue it still has that fundamental black fruited personality that's recognizable in any Pichon-Baron to this day.
