  November 23, 2023 - Day 1: over three hours this slowly opened and added depth. Enjoyable now, but this is young and needs many years. Light-moderate aromas of oyster shell and citrus. Moderate+ concentrated flavors of citrus , yellow apple, and bread dough on a long lingering finish of lemon drops with the faintest hint of sugar. Fresh, with tons of energy. Revisit in 2030+. 93-96.
  Day 2: about half the bubbles remaining. Moderate+ flavors of fresh lemon drops. Built for the long haul.

  January 14, 2023 - This has definitely matured from 2 years ago. It has added a bready component to its citrus nose that used to be slightly mandarin orange skin to more like lemon peel presently. The palate had Granny Smith apple, almond, biscuit, and a mineral/quinine finish. It is a pretty feminine wine, light and delicate. It was a nice way to start our anniversary meal.

  January 1, 2023 - Light toast and brioche is the first impression on the nose, fruit opened up a bit a little later. Dense bubbles with a creamy mouth feel. Breadiness, apples, lemon zest, strong acidity. Nice long finish. Elegant but not a showstopper, might come together with more time in bottle.
