March 14, 2018 - ''Asticus Mons Cabernet Franc'' has one of the extraordinary technical figures. Ph is stunningly low: 3.25, Very high acidity:6.7 gr/l Tartaric, IPT is 65, ICM: 13 and 13.5% alcohol . The wine is coming from Chamlija's highest altitude Cabernet Franc vineyard in Islambeyli at 380 meters asl. The vineyard is just a few km from Strandja peak and 35 km to Black Sea coast. This is cool climate. Total hang time in 2016 was 75 days between mid verasion and the harvest date (October 25). Last 30 days temperatures before harvest Tmean: 14, Tmax:18, Tmin:10. Well; the wine shows clearly that it comes from a cool climate terroir. Dark ruby color. Fabulous perfumed aromas of sour cherry, raspberry, strawberry, cocoa powder, mountain oregona , minerals, menthol, tobacco and Asian spices . Fresh, juicy, spicy red berry and red currant flavors offer outstanding intensity. Tactile, rich and complex. Finishes with ripe, fine, silky tannins and outstanding minerally persistence. This wine proves that Cabernet Franc does not need to be overripe to bring forth great wines. Aged in new French oak for 12 months. As a result, it won CIDC wine competition. A Gold medalist wine. It also won another Gold medal in AWC.
