  September 15, 2021 - Dinner at Osteria Langhe (Chicago, IL): From half-bottle. This is about as textbook botrytis as it comes. Almost over the top, but not really. The nose is honeyed and exotic with a note that evokes passionfruit, alongside the more obvious floral tones. Despite the sweetness and intensity on the palate, the acidity gives this so much lift. There's some sneaky minerality on the back end of this too. This is an incredibly intense wine, and while it's one of those where a little goes a long way, it also doesn't feel overwhelming.

  February 26, 2020 - Dinner at Table, Donkey and Stick (Chicago, IL): #27-18, 8% abv. From half-bottle. Inordinately spicy nose, with an intense floral perfume (but not the sickly kind). This is lifted, spicy, and elegant, and supplemented by a kaleidoscopic array of tart fruits: peaches, apples, and apricots are pretty prominent. The fruits are more of the Midwest persuasion; less citrus, pineapple, and tropical fruits. The palate is obviously sweet, but it doesn't actually feel as sweet as it probably is. That's because of both a high amount of extract and what must be a crazy amount of acidity. On the back end, there's an intense vein of minerality that provides structure. All this blathering aside, this is an inordinately delicious wine. There's no need to age it, just pop the cork and enjoy.
