  April 4, 2023 - This was much better than I was expecting. This was channeling BdB all the way. Crisp, with green apple skin and flesh, and a lovely swallow and finish. Some barely toasted sweetish bread. Quits good.

  November 24, 2022 - Medium gold with a moderate stream of steady fine bubbles. Toasted brioche, nuts, caramelized apples, and citrus zest on the nose. Heavy bodied, just the right amount of acidity, and a broad palate of fruit – Caramelized apples, pears, tart nectarines, and a bit of dried apricot supported with subtle hint of toasted brioche. Long zesty finish that fades into mouthwatering combination of white flower petals, caramel, saline, limestone, and yeast.
  
  This is drinking great and glad I keep an eye out on WineBid for older bottles of UTW. It proves to me, that just like Bedrock’s still wines, these need several years from the release to fill out.
