  May 2, 2020 - Medium golden, lemon. Dry, medium acidity, slightly tannic, medium alcohol @13.5% abv, and medium(-)-medium body. Lemon, menthol, white pepper.
  Not particularly complex or with much depth. Crisp bright lingering finish.

  December 8, 2019 - PnP and drank over 2 hours. It definitely was better at room temperature and with air. We'll decant our next bottle.
  
  Pale yellow. Once warmed up, shows mango, pear and violet on the nose. Palate is refined, shy at first but once warmed emerges with violet, floral herbs, mineral notes and mild acidity.
  
  Paired with a simple roasted vegetable and chicken thigh dish, it did ok. The most fun was with fresh and dried fruits during dessert. The acidity of strawberries was particularly nice. It excels with creamy cheeses, even blue cheese.
