    January 21, 2023 - Pale gold colour. The nose is showing some development, with mature green apples, some lime and the slightest hint of petrol. On the palate, the wine feels fresh and zippy, with good levels of acidity. Notes of fresh citrus, mature apples and herbs.

    Overall, this wine feels like it's at its peak right now. Will most likely still keep for a few years, but I can't really see it developing much further. I definitely think this wine usually benefits from a year or two of aging, as it tends to have a strong, almost piercing acitdity in its youth. I feel like aging it makes it a bit more versitaile in terms of food pairing. There is still nice acidity left, but as a whole it feels a bit more balanced, and has more depth. Great stuff for the price!
