    February 24, 2024 - Decanted 1/2 hr. Drank over 2 days. Day 2 was a bit bigger in taste than day 1. Dark fruit nose. Big, bold tastes of dark fruit and cherry.

    April 25, 2022 - Extreme dark, and high extraction
    Nose of uncooked bacon, paprika, molasses, and dark black fruit syrup. Also some stainless steel?
    Taste follows with uncooked bacon, paprika spice, and some black fruit. Almost like bbq, with a fruit sauce. Also some leather. Medium- tannins and low acid. If the acid was higher this would be a winner

    September 28, 2021 - Notes from day 2 after opening: Nearly black in color with the slightest hint of a dark purple rim. The nose is intoxicating sweet pipe tobacco, candied dark fruit and fresh asphalt. On the palate the savory earthy notes hit first with beef, pepper, tar and soil...then the blue and black fruit follows as an afterthought. Nice balancing acidity and slightly chalky tannin that will resolve in time with experience with HS.
