  November 13, 2021 - 100% Chardonnay - Blanc de Blanc
  from Cote des Blancs:
  78.5% Cramant and Chouilly Grand Crus,
  7.5% Oger Grand Cru
  14% Cuis 1er Cru.
  Manual harvest. Split pressing. Temperature controlled fermentation.
  Malolactic. Raised 8 months with 3 racking. Cold stabilized (-4*C)
  and light filtration on clay before assembly.
  Aged on lees 60+ months.
  Disgorged April 2018.
  12.5% Abv. Zero dosage.
  History: Gimonnet family based in Cuis with long history.
  Modern era began with grandfather Pierre (1930s) and father Michel (since 1955)
  Today: Olivier and Didier Gimonnet, two of four children of
  Michel Gimonnet and Françoise Gimonnet Larmandier.
  
  A(ccuray)=2: Bright lemon/straw. Fine mousse, mild perlage.
  B(alance)=3: Distinctive components with firm acid structure.
  C(omplexity)=2: Citrus, dried fruits, brioche, chalky minerality.
  D(epth)=1: Vibrant mouthfeel. Good length and finish.

  September 19, 2021 - VERY austere upon opening, although such a fantastic nose that had me thinking this was going in another direction. Tightly wound up with lemony accents , slight chalkiness and not much else. Opened up after some time in the glass but never managed to do it for me. Medium minus mouthfeel and the same with the shortish finish. Well made but this style?, bottling not my style at the moment. Probably not the wisest to pair with scallops and garlicky ( on the light side) lemon pasta. Wasn’t a home run of a pairing

  Crips, acidic, citrus and bread notes.
  No complaints.
  I might not remember it — buy I enjoyed it!
