March 17, 2021 - The wine was garnet at the core and slightly lighter at the rim, it had a good deal of sediment and was opaque with fast moving leggs , high viscosity with 14 % alcohol.
The wine condition was good with medium intensity the bouquets
I observed were wet hay, nail polish remover, coffee and black forest cake.
I decanted and aerated this wine for 30 minutes prior to tasting.
On the palate I tasted dark cherry, cranberry and tobacco with a bite. The wine was dry and medium bodied. There was a chewy texture and a long finish. Alcohol was high and tannins and acid medium to low. The balance was off due to the high alcohol. This wine needs to be consumed now and will not improve with age. This paired well with spaghetti bolognaise . -

December 12, 2020 - Appearance: Deep garnet core with quite a bit of fine sediment. Plenty of legs that are fairly dense and slow moving (alcohol is 14%).
Nose: Very intense. Lots of complexity. Strawberry and raspberry swirling with milk chocolate. Ripe brandied or Maraschino cherries. Almond. Fennel/anise, sweet tobacco, and something earthy—forest floor or cedar.
Palate: Medium to full bodied and dry. Complexity remains—flavours vary wildly depending on food pairing (see below). Nicely balanced—medium-high tannins and acid. Bitter dark chocolate. Dark cherry. Finish lingers, especially with the forest/cedar notes.
Food pairing: Needs some time to breathe before consumption—decanting recommended. Pairs nicely with something earthy, rich, and umami—a porcini mushroom bordelaise sauce and pasta would be great. We had it with mushroom risotto. Avoid spicier dishes and opt for creamy sauces over tomato-based sauces. Also pairs nicely with chocolate—milk chocolate brings out pepper notes typical in Syrah as well as cherries.1 person found this helpful Comments (1)
