November 1, 2021 - My first of 3 & superb with crab sandwiches tonight! This btl is a standout in a standout vintage! Especially, delighted by its palest of green gold color & a pristine nose. The fruit is said to come from vines ranging 35 to 80yrs old. Truly, outstanding balance w/ more than enough Chablis cut to offset its subtle richness. A complex array of lemon lime, orange peel, pears, saline and signature mineral. Radiant! Pristine sea breeze aromas. Loved it! Happy to have 2 more. A very modest 12.5% alc - bravo! Billaud Simon makes terrific wines but clearly, need to switch to newer Diam corks Fevre uses. Tonight's btl was perfect though. 93+
