    July 31, 2023 - Took a while to open up - was super tight and needed decanting. Muted nose that got more interesting with time but the palate went from linear to complex over 1.5 hrs. Great chablis but still young and tight.

    April 7, 2023 - A very enjoyable and focused bottle of Dauvissat Sechet 2017 that was showing very well at present pop and pour. Green apple, lemon, lemon pith, dried flowers, a touch of salinity, almond paste, and just a hint of oak that blends it all together with very elegant acidity. It seems quite linear, and I would say less complex in general if compared to Vaillons (in general). Strangely while this wine is quite fabulous by itself, it was a bit too specific in some aspects and lacked ability to pair with a range of food. Perhaps this explains why, in addition to reduced quantities in the market even upon release, that you very rarely see Secher / Sechet Chablis on wine lists (at least in my area). Some might say hold it longer, but I can’t expect this to be any better right now.

    Retasted the next day when it had more herbs, vanillin, and roundness. It is surprisingly broad for young Séchets and doesn’t have the drive of the best vintages of this cru.

    June 10, 2022 - Simon's Dauvissat dinner (Lorne): Surprisingly open: it didn't feel at all premature to open this. A fairly subtle nose compared to the Raveneau, but lots going on: caraway, steel, saline oyster and, with air, even icing sugar. Incisive on the palate, smoky, full of zesty lime, then a lovely development through the mid-palate, accelerating towards a chewy finish with a touch of cream. Superb - my WOTN, group joint #3.
