    March 9, 2024 - Fantastic! Fresh and dried fruit with autolytic notes that have melded into a bouquet. Ripe and dried apricot, fresh and dried lemon zest, raspberry, sourdough bread, pastry crust, yellow apple, ripe pear, cranberry, ruby grapefruit, toast, honeysuckle, hazelnuts, crushed granite, and ginger. The mousse is more lively-aggressive than pillowy-soft. Gentle acidic bite from blocking MLF. Rich full texture that remains spritely due to the well-integrated high acid (like a Cadillac SUV in a Formula 1 race). Layers of complex flavors and a long finish. Medium gold color. 70% Pinot Noir, 30% Chardonnay. 90% Ambonnay Grand Cru (their vineyards), 10% Bouzy Grand Cru and Verzenay Grand Cru. 50% 2017, 30% 2016, 20% 2015. Fermented and aged in barrel, 10% new. Aged 48 months on the lees. Unfined and unfiltered. Looks like dosage is 3 g/L.

    February 21, 2024 - This Grower Champagne has been one of my favourite bubbles for the past year, and its described as family-style.

    Non-filtered and spent an extended 48 months on the lees (Lending that signature brioche nose), this was disgorged July 2020.

    70% Pinot Noir with 30% Chardonnay (Ambonnay)
    Dosage 2 or 3g/L
    50% reserve wines
    50% ageing in wood

    Fine mousse, lots of red apple with some green apple too, and this bottle showed a lot of salinity. My last bottle in the cellar.. I need more đź‘Ź Chor 12 at Casa SKT where this and TCs Rare 2008 champers paired perfectly with the delicious Capellini with prawns!

    February 5, 2024 - As it is the week leading up to CNY, I decided to spoil a small group of buddies with my 2nd last bottle of Egly-Ouriet 'Tradition' Grand Cru Brut!

    Enjoyed with RN and M, LMC, SKT, WMK and L too. Our wonderful aperitif, which also went superbly well with Butchers Table house salad with capers and smoked salmon.

    Technicalities:
    70% Pinot Noir with 30% Chardonnay (Ambonnay)
    Dosage 2 or 3g/L
    50% reserve wines
    50% ageing in wood
    51 months on the lees
    Disgorged: August 2020

    Francis Egly and his grower champagne movement produces wines of exceptional quality, with what is described as powerful, terroir-expressive sparkling wines that are mainly based on Pinot Noir.

    Such a distinct toasty and brioche nose, with depth in the gold coloured tones. Great start!

    The acidity is M and resolving, and brother RN agreed that what sets this Grower Champagne apart from others was the super fine bubbles and mousse which is really quite spectacular. I loved the full bodied mouthfeel, creamy red apple notes both on the palate as well as the nose, and this is truly an expressive cru kind of like a "baby Krug"!

    For this Francis Egly’s non-vintage Brut bottling:
    Fruit comes from his family’s vineyards in Ambonnay (90% in fact) and the balance from their holdings in Bouzy and Verzenay.

    The cépages is seventy percent pinot noir and thirty percent chardonnay, with the vins clairs barrel-fermented and aged in cask, but not going through malo. Ten percent of the casks are renewed each year.

    Long finish too, with great concentration and a light chalky lingering note. Wonderful Monday night to usher in the week of Chinese New Year 2024.. bring on the Dragon!
