September 15, 2023 - CBCC Joseph Heitz wine dinner.

The culmination of tonight's tasting ends with MV. Well this was the best of the night with a mint, bay leaf flavor start that leads to medium red fruits like plum and raspberry. Finish gets broader with a spiced darker fruit.

June 7, 2023 - Haven’t had one of these in a while. So distinctive and singular. Hits all the elements. Powerful herbalness, minty, forest. Refined berry fruits.

February 7, 2023 - Napa 2023: the quieter version; 2/6/2023-2/11/2023 (Napa/Sonoma California): Darker fruits right at the beginning which seem to morph to more darker red fruits - maybe something like a currant. Lots of pepper and spice. Just a slight hint in the background of the minty/eucalyptus style that I associate with the vineyard. Very clean and classic style of winemaking.

December 24, 2022 - Needs time in the bottle. Not ready. Wasn't as approachable as I wanted. Still good, but for the price....... :(

Food Pairing

Community Recommendations

Cabernet Sauvignon was made to pair with red meats. The key to Cabernet Sauvignon food pairing is to consider the tannins. Tannins need protein to break down. Cabernet has high tannins and pair best with fat rich meats that are protein rich. Cab’s fruity, Grana Padano and Pecorino will also pair well. Cabernet Sauvignon is almost always aged in oak, lamb and meaty pasta dishes. Rich wines like Cabernet Sauvignon need savory cheeses full of flavor that can stand up to the tannins and structure in the wine. Aged cheddar, Manchego, Parmigiano-Reggiano, which softens the wine and makes it pleasant to drink together with food.
