January 5, 2024 - Enjoyed tonight with oysters on the half shell. What a perfect match! Small bubbles, yellow fruit, peach and mango, salinity in check with white pepper finishing on a steely minerality which was just perfect with the oysters. This one was opened alongside a 2002 Dom Perignon, and I think that this 2008 Vintage Billecart gave the 02 Dom a run for its money.

December 23, 2023 - The nose is quite open with just a hint of something more mature like honeycomb or a little hint of yellow apple. In the mouth the body is forceful and just starting to flesh out but still has structure and a very dry palate without a hint of sweetness, probably indicating that the acidity is well balanced.
I really enjoyed this! Long journey ahead of this wine.
