April 12, 2024 - Lemon coloured with hints of gold, medium intensity. Fully developed, low intensity nose. Spicy with just a touch of green. On the palate dry, medium(+) acidity (very apparent in the afterfeel), medium body. 13%. Spicy, dried herbs, wormwood. Yellow fruit, peach. Thick textur. Intensity in flavours. Good length.
    Drink now.

From importer information: 100% Sauvignon blanc from in average 35 year old vines. Limestone soils (caillottes) around Chavignon. Hand harvested, pressed and fermented without added yeast in 18C temperature, stainless steel tank. Matured 5 months on lees in stainless steel tank. Bottled March 2019.

December 25, 2022 - Gooseberries, ripe apples (slightly oxidized notes)
Rich taste, high acidity, zesty tones, green apples, bruised apples, and a mineral touch.

August 4, 2022 - Very fruity with gooseberry/white peach notes. Giving off a sweet honey note even though it is a dry wine. Have fleshed out to a more significant body with the additional cellar time which is at the cost of freshness but still a quite tasty wine.
Would pair with fattier or spicier dishes rather than shellfish/light/briny dishes.
    Glass: Zalto White
