    January 31, 2022 - Pop and pour.

I like the nose. Captivating vanilla strawberry. Bright red currants with that light fresh soil that comes from the stemmed fruit.

Palate falls flat and thin. Expected more from that beautiful nose.

Light finishing and refreshing if chill.

I like it for the nose. Nice afternoon drink but not as enticing and complex.

December 22, 2021 - I really enjoyed this bottle, excellent pinot noir!
Expressive nose with fruit caramel, raspberry, strawberry, cherry, herbs, white pepper and soil or dirt.Quite a distinguished nose!
Fruity and smooth on the palate, with the roundest of tannins and a very well balanced acidity. Fruity and flirty but with enough structure not to loose balance and elegance. Will hold for a few years, but this is ready in my opinion.

August 10, 2021 - Decanted and drank over 2hrs .. needs 1hr decant and improves over time but a bitterness persists that I hope will dissipate .. suggest wait for 2 yrs before next tasting

March 1, 2021 - PNP, fruit forward, good straight from the bottle but did improve after an hour. Light colour, vanilla and red fruit on the nose. Very fine tannins. Fresh and easy to enjoy. It will continue to age well over another 5+ years but I like it where it is right now (and probably another 1-2 years). This was my first GS Applejack PN. I plan to open a ‘13, ‘16 and ‘18 in a vertical tasting; maybe I’ll change my mind about drinking age.

January 1, 2021 - - Purple color with medium forming legs and aromas of strawberry, raspberry, licorice anise, black pepper and geranium. It's balanced and has flavours of strawberry, raspberry, chocolate, black pepper and dusty with a light/medium body. Polished texture with a medium finish.
