September 16, 2022 - Chablis Grand Cru - the Jewel in the Crown (Hong Kong): 13th generation owner - 26 hectares of vines.
Valmur = “Valley of brambles” or “stone walls” (not clear, but basically an amphitheater that soaks up the sun like Les Vaudesirs).
Sits on kimmeridgian soil but sub-soil of clay. Mainly south-southwest facing. Known for austerity, minerality and some complexity.
Vines young - only 15 years old. Aged 8-10 months in stainless and oak.
Complex nose yields notes of many fruits including lychee, honey, melon. Palate is rich and round despite young vines. Subtle layers with hints of oak and malolactic creaminess.

January 17, 2021 - For lovers of classic Chablis, this ain’t it. Very soft, broad, open knit. Really pleasant flavors but none of the tidal pool, oyster shell, lime zest flavors that make me love Chablis. I usually like this producer but many 2018s from many producers seem to be in this category of soft wines with little raciness.

November 12, 2020 - Nose: The nose shows concentration along with excellent balance and depth that is backed up by tones of succulent apples, peaches, apricots, chamomile, lemon peels, flint, white flowers, and crushed rocks.
Taste: The feel is Medium/full bodied with racy, high acidity. The feel is well textured and deep with apples, apricots, chamomile, white flowers, flint, lemon peels, and crushed rocks.
Overall: There is a fair amount of baby fat on this right now and the alcohol has a bit of a sting. It is wide open to drink after seeing a good bit of air in the decanter, but it can definitely use at least another 4+ years to fully come together.
