    October 15, 2022 - Appearance: Bright purple, almost magenta

    Aroma: Kalamata Olives! So much olive on the nose. Smelling past the olives, there is so much more here. Lavender and violet, bacon grease, black pepper, blueberries, even some hints of citrus.

    Taste: Light and lean. Very fine, well-integrated tannins. Nice acidity with a long finish. Roasted game meat, moderate blue fruit, black olives.

    Another great showing from Pax. This is drinking really well right now but can definitely go for another 5 years or so before any concerns of this dropping off. I’ll also add that I PnP’d for the above notes, but I did double decant the wine since there was a ton of very fine sediment and I had to go out for a few hours. Coming back to it later, the notes are pretty similar but the wine is a bit smoother and the fruit has started to come forward more.

    July 21, 2022 - Old world syrah style for sure. Lean (only 12.6%?) and food friendly. Black pepper, lavender, and cranberry. Better with food. Paired really well with cooked kale (cumin), BBQ tempeh and roasted paprika potatoes. Was lacking some element of freshness.

    *This was just stored at my house (not in my cellar) for a year and a half. This certainly could have affected it negatively and I wouldn't be surprised if this scored a point or two higher with proper storage.

    October 4, 2021 - Really enjoyed this. Not dark and foreboding as some Syrah can be but still had the lovely olive and other savory notes. Fruit was fresh and at the forefront. Just a lovely bottle that was gone quite quick—will buy more!
