    We’re super sad about this, but this bottle was unfortunately corked! That said, we’ve drunk around 5-6 bottles of this cuvée, and many, many, many of Fleury’s other cuvées, and this is the very first time we’ve had a corked bottle of theirs. It had to happen at some point!

    December 26, 2020 - It takes a few moments to open up in the glass but once it does, WOW. One of the most extraordinarily delicious and "vineux" champagnes that I have ever had the pleasure of tasting. Very delicate bubbles, gorgeous acidic backbone. I don't think anyone has to be in a hurry to drink their stock of this since it should continue to age gracefully for at least another 5-10 years.

    202 months on lees, disgorged in September 2019, dosage 0 g/L.

    APPEARANCE:

    Aromas: stewed apple, very ripe pear, toast, walnut, hay, quince, baking spices, forest floor, hint of old leather
    Development: developing

    PALATE:
    Sweetness: dry
    Acidity: medium (+)
    Alcohol: medium
    Body: medium (+)
    Mousse: delicate
    Intensity: pronounced
    Flavors: stewed apple, baking spices, toasted almond, brioche, chalk, pear, lemon, lemon zest, hints of honey and salt
    Finish: long

    CONCLUSIONS:
    Quality level: outstanding
    Potential for ageing: can drink now but has good potential for further ageing

    We have drunk multiple bottles of this cuvée, but this is the first one of the second disgorgement. Quite different, which is understandable for a cuvée of these characteristics; in this case, the ageing was much more noticeable, and the bottle seemed more advanced: old library books, old leather, copper, mushrooms, truffles, forest floor, bonfire, roasted chestnuts, and caramelized almonds; ample spices such as clove, black pepper, dried ginger, curry, sea salt, and some maple syrup; a floral/perfumed side with lavender, violets, and elderflower; less of an intense exotic fruit presence than previous bottles, but with some guava, blackberries, cherry liqueur, and sun-dried raisins.
    This is not a delicate, shy wine at all; it’s powerful and voluptuous and makes a strong impact from the start. The texture is dense and syrupy, and the acidity has maintained itself so well throughout the years of ageing. It’s a spectacular cuvée by Fleury that really demonstrates their craftsmanship.

    Third bottle. Quince, saffron, honey, panela, mushrooms and sous-bois, copper, maple syrup, passion fruit, very ripe pineapple, coconut flakes, walnuts, peanuts, chestnut purée, lots of cinnamon and clove, liquorice, baked apples, ginger cookies.
    Very dense texture with creamy bubbles, some acidity balances the wine. Impressive.
