    May 27, 2019 - P'tit Plateau in Montreal. Excellent bottle. The richer and rounder character of the vintage, more towards White Burgundy if you will, but still lots of acidity. Terrific intensity and finish. A versatile match with food around the table including escargots in a cream/shallot/mushroom preparation, celeriac soup, and a complex salmon preparation.

A model of understated, subtle Chablis with seashell, tide pool aromas, medium body, delicate flavors. It just kept coming and developing over 2 hours, gaining bite and intensity along with lemony fruit and increasing limestone. Not a blockbuster by any means, but a tour de force of complexity and length. Essence of Chablis, this, and no telltale signs of a sweet or overripe year.
