December 22, 2019 - En el municipio de Maredeuil se elabora Elia, un primer cru blanc de blancs extra brut. Chardonnay plantada en suelo argilo-calcáreos de Pierry y bajo agricultura ecológica y biodinámica. Levaudras salvajes, sin maloláctica y criado en fudres de roble durante 11 meses, sin filtrar ni clarificar. El dosage es de 5,5 g/l. El degüelle tuvo lugar en abril de 2018. Que interesante este champagne de color oro viejo y nariz madura, hay fruta blanca compotada, frutos secos, flores secas, notas tostadas y un toque de miel. En boca tiene buen ataque, muy cremoso, notable frescura, largo y con profundad. Excelente.
