October 27, 2008 - Finally,proof that slow oxygenation really does work. A low-mid shoulder level in a half bottle. I opened this about 4 hours before we planned to drink it. It smelt like death in a bottle - maderized would be polite. I left it a couple of hours, a second sniff, still maderized but some cassis fruit showing as well. A couple of hours later the deathly smell had gone and only the fruit remained. I poured it all into two big Riedel Bordeaux glasses and we drank it with roast chicken over about a 20 minute period. While there was still a hint of decay about it this was a nice, mature, one-dimensional cassis flavoured Pauillac. Quite drinkable and quite enjoyable. By the last mouthful the oxidative notes were starting to return so its window of drinkability was short but pleasant. The air clearly made a difference.
