    June 7, 2021 - 2 hour decant
    Showing quite nicely right after opening the bottle, but was still improving after the 3 hour mark
    Herbal, cassis, black tea, cool pantry spices (as opposed to exotic spices), blue fruits. Some funky meaty/animal notes, cool smoke. Feral/iron notes
    Medium body
    Medium, fine-grained tannins
    Excellent to outstanding length
    Elegant, fresh, and balanced (despite warmth of the vintage). There is a cool quality to it
    This will obviously improve with time and will pick up points
    Grand Cru-quality

    May 22, 2021 - Good but definitely showing weight of the vintage. Big weight, blind I would have called new world. Despite this good nuance with pretty aromatics that needed coaxing. Probably will be very good with time but needs it. Do not recommend pop and pour.

    October 22, 2020 - Extremely tight and youthful, almost like a barrel sample. Hard for me to judge at this stage, but clearly there is a lot of potential here.

    I left the bottle out for several hours after my initial tasting. 6 hours later this is starting to be more expressive. There is some nice ripe fruit here behind the tannin, but will take a while to come together.

    June 28, 2020 - 1.4ha of vineyard, average age of vines 35 years old. 50-60% new oak. In 2018, Gevrey Chambertin outperformed overall as an appellation, and this Aux Combottes is no exception. Beautifully laced blackberries, dark cherry, and sandalwood. Great freshness, 13.5% alcohol. Proper Premier Cru substance with fragrant stems and spices. Lots of polyphenols. Firm tannins with dense and ripe fruits. A 2018 standout. Drink from 2026 onwards. (88-89/100)
