    February 3, 2023 - Nose: cumin, oregano, blueberry, turmeric. Palate: Distinctly herbal. Spritzty at first which blew off with decant. Fairly significant tannin invites some potent bitterness and like a vegetable broth with some twang. Acid well balanced. Needs time.

    Day two: more foresty aroma, wood. Tarragon. Palate has come together, some umami, bitterness and twang gone. Vegetal flavor has rounded out nicely. Superior to night one.
