March 31, 2024 - No detailed tasting notes as one knows what he's looking for in those wines. I'm a lover of vin sous voile especially with good French cheese, and for me Macle was unbeatable (for his Chaton-Chalon and Savagnin Tradition). Had low expectations as I've been pretty disappointed so far with Aviet's Trousseau, Poulsard, Melon à queue rouge, ... Well this one is just mind-blowing, beats Macle's Tradition by a notch, it's already incredibly well integrated, and sure more years will make it even better especially on the nose, but it's just amazing.
The greatness of this wine for the price point, if you find it, just don't hesitate one second... drink it alone or pair it with Roquefort, Stilton, Comté, Camembert, ...1 person found this helpful Comments (2) -

April 20, 2022 - 30 min. decanted and back into the bottle. Drunk one bottle on the next day and the other over a course of six days. Very expressive on day two and three with curry, walnut and a sweet touch that disappears in the days after, strong acidity, mouth filling and very long. Requires a lot of air and patience at this stage, will age nicely over the next two decades.

May 2, 2020 - 100% Savagnin aged 5 years “sous voile” (oxidative), if I remember correctly. 13.5% vol.
- Day one, PnP. On the nose it starts with lovage and curry, with air this goes to the back and more nutty elements come to the front with a fresh citric touch, on the palate intense with good acidity, mouth watering and long, needs time in the glass to come together.
- Day two, similar but less expressive and with the additional taste of apples, declined compared to the first day.
- Day three, again lovage and curry, less nutty, very precise, dense and still very fresh and long, again better than on day two.
- Day five, last sips are the best, lovage, curry, walnut and lemon in the perfect proportion now, mouth watering acidity, good concentration, long finish, superb.
Very good with food (cheese or tapas) or at its own. Early drinking window, requires some patience, best to leave it some years in the cellar, can age until 2044. Better than many Vin Jaune and with a superb price to quality relation, 93+.1 person found this helpful Comment
