Highly acidic on the palate. With air and a vinaigrette salad, it was quite resolved, however and refreshing. This wasn’t the first time I’ve called an Eisele Sauvignon Blanc a white Bordeaux. A high quality wine, that needs some air. But it turns into a delicious Bordeaux style wine.

May 20, 2023 - I haven't consumed a bottle of this since 2021 - still drinking well with noters of cut grass, herbs, lemon curd and grapefruit. Nice balance with good acidity.

March 7, 2023 - Same notes as before, on day one just slightly more advanced. Completely fell apart on day two - felt flabby, syrupy and had a weird acidic bite.

Nose: Strawberry stems, lemon, saline, almost a brie note. More grass as the wine warms
Palate: Sweet, High minerality, round mouthfeel, grassy note on the back. Bit of white pepper. Medium acid, medium body, medium finish.
Very clean, if a bit one-note.
