    March 4, 2024 - At first I thought this the more “typical” white I have had from CB in some time. Nope, it was just too cold initially, and as the wine warmed all the unique goodness from this producer came to the front. Less acidity than your mom and pop SB, but no lack of structure or freshness. Some tropical fruits, guava perhaps sit in the back ground while a Italian herbal (think oregano and sage) takes the center stage. Versatile white and could be served with a wide array of food, and in this case, great pairing with a marinated beet, orange and goat cheese salad

    July 1, 2021 - Pretty consistent with my previous note four months ago. Tomato leaf and a bit more tropical fruit this time around with passion fruit, guava, and pineapple; alongside a slightly broader and richer texture and a gentle phenolic bitterness finish.

    ABV: 13%
    Closure: DIAM 10
    Decant: 30min
    Stem: Gabriel Glas StandArt
    Assemblage: Fermented and aged in older oak for 10 months. 52 cases produced.

I was a little hesitant at first, not wanting to be disappointed because we've been drinking a lot of Sancerre lately. Thankfully, pleasantly surprised. All the freshness and minerality I was hoping for. Clearly the fruit came from a cool site and harvested at the correct time (not pushing it). Light floral elements, with nice herbal tones adding chromatic character. Different from its French cousins, but still in line with my own preferences.

    March 14, 2021 - This was a geat sauv blanc. I’ll be honest, it’s not my favorite varietal but I’d had a few other wines that Saul made and liked them all. My buddy recommended this one so I wanted to give it a try. Good ripeness, but not at the expense of the acidity and hints of minerality. Pineapple, apple. Also a very pleasing ripe nose. I’m saying similar things to other who have had left notes but it is a very food friendly wine. Had this with posole and it went very well, especially with the New Mexican green chilies. Would highly recommend the wines that Saul makes.

    February 11, 2021 - Sauvignon Blanc always seems to be a really polarising grape varietal. It’s a challenging grape to make well. So many producers, especially in the US rely on its ripeness to produce robust flavours at the detriment of minerality and acidity.

    I was excited to try Saul’s wines after after reading Marcus Goodfellow’s tasting notes on their Chardonnay and learning more about the project. I got even more excited when I found out they made a Sauvignon Blanc from the Durant Vineyard, a vineyard in the Willamette Valley which arguably produces some of the best whites in all of the Willamette Valley. Needless to say, I was stoked to crack this bottle open.

    On the nose, the pyrazines are definitely there, expressing themselves more towards tomato leaf and fresh cut grass than bell pepper—although there is a bit of it there as well. Loads of ripe passion fruit, grapefruit pith, and lime zest follow with this flinty stony minerality to finish things off. A cool, crisp, and incredibly food friendly wine.
