December 24, 2023 - PnP, 12C. First sip; bee wax, honey, white flower, tangerine, carambola, nettles, tart boysenberry, pineapple candy, lemongrass, mineral, chalc, walnuts. Complex and with soul.
Good acidity fresh. Do not think it will improve and godd for att couple of years. With Kalix roe, but prefered to match with goat cheese. Chèvre chaud could be perfect…try next time

Gooseberry, nettles, minerality, red currant, honey melon, grey pear. Complexity and quite long.
With goat cheese pre dinner.
