May 23, 2020 - Fermentation takes place in a combination of 35% new, 40% second and 25% third fill French oak barrels. Only 500L and 600L barrels were used. The wine spent a further 10 months in barrel aging on the lees.
Aromatically complex and bountiful with scents of quince paste, plump apricot and nectarine, apple, orange blossom, jasmine tea, vanilla, stone and saline with hints of flint.
The palate is full and unctuous with a slightly waxy texture. The acidity provides lift and structure. The flavor show an excellent combination of apple, quince, nectarine, tangerine zest, orange blossoms, peach skin, jasmine tea, river rock, with the hints of saline and flint. The wine finishes clean and dry with a pleasant weight on the mid-palate.
