  May 17, 2021 - 100% Pinot Noir, macerated with the skins for 24 hours. Aged in 600-liter demi-muids. 12% alcohol, 8 g/l dosage. Tasted blind along with two Soter Rosé sparkling wines from Oregon.
  
  Medium-deep raspberry red color. Restrained but fine-tuned nose with aromas of red apple, some autolytic notes of fresh bread, a little bit of ripe orchard fruit, light red-toned cherry notes and a hint of black raspberry. Dry, lively and firm on the palate with a medium body and a fine, silky mousse. Flavors of brambly raspberries and fresh cherries, some yeasty autolysis, a little bit of creaminess, light nuances of juicy red apple and a hint of chalky minerality. Good, structured acidity. The finish is long, crisp and refreshing with bright flavors of ripe citrus fruits, some chalky minerality, light red-toned notes of forest fruits, a little bit of brambly raspberry and a hint of leesy creaminess.
  
  A nice, sophisticated and tasty rosé Champagne. Still quite youthful and pretty linear in style. My guess was that this was the Champagne out of the three sparkling wines we had. Very enjoyable, but ultimately nothing too memorable. Most likely will improve with age, based on how youthful the wine still is.
