    October 26, 2020 - A blend of 51% Chardonnay and 49% Pedro Ximénez. This is really a very clever and dangerously drinkable wine. Fortunately it is only 12% ABV. The Chardonnay brings tropical fruit and some bitters to the blend, and the PX brings freshness and a creamy, spicy sweetness. As a result it's easy-going but not bland, supple and well-balanced, and actually quite elegant. I bought it for making my Amatriciana sauce, but I think I will have another sip...
