    Celilo and Rainmaker Vineyards 62% Pinot Noir / 38% Chardonnay

    Celilo Vineyard sits directly on the crest of the Cascade Mountains on a 1,000' bluff on Underwood Mountain, overlooking the Columbia River Gorge. This is a unique environment where marine, desert and alpine climates intersect to provide weather patterns perfect for distinctive wines. The Pinot Noir, planted in 1972, has rows oriented north-south and vines are trained to a Scott-Henry trellis. Clusters are thinned to one cluster per shoot to maintain low yields. Soils are volcanic and are dry farmed.
    Rainmaker Vineyard sits in a stunning natural amphitheater at about 1,400 feet above sea level in the mountains overlooking White Salmon, Washington. Part of the original historic Mont Elise Vineyards from the 1960’s, and replanted in 2013, this is an exceptional western Gorge vineyard site. Transitioning to organic in 2019, and planted to a diversity of grapes, this is a truly exciting vineyard. We have Chardonnay and Trousseau planted here. Cold mountain nights retain brilliant acid levels while the south facing volcanic slopes capture the summer sun. Here we grow dynamic Chardonnay to make a distinctively Gorge Sparkling wine.

    This sparkling wine was made using strict “Méthode Traditionnelle”. The fruit was whole cluster pressed with no added SO2. The initial fermentation was in neutral barrels, with native yeasts. The wine was hand bottled and laid down for two years en tirage. It was then hand riddled and disgorged in April 2020 with 3.6 g/L sugar dosage and 6ml/L Estate Grown Gamay Noir dosage.
