April 18, 2024 - Dinner at 312 Fish Market (Chicago, IL): Kind of a weird wine. Doesn't come off particularly riesling-like but it's also not like any other grape either. Good minerality here, but it's just a bit of a baffling wine to be honest. Not really sure what to make of it. That said, it was actually pretty good.

June 11, 2023 - Very tight and coiled. Green plum, a sage-like aromatic and salinity. Lots of structure though soft and round. Really good.

May 2, 2022 - Rather amazingly, Wolfram Stempel only began making Mosel riesling in 2017. He is non-traditional in some aspects of his technique
DAY1
Served with the Vinloq System
👃Fruits, minerals, herbs, matchsticks & petrol
👅Citrus, nitrates like canned meats with a salty mineral finish. Savory & interesting. Unique for riesling. Not quite precise yet
Remaining wine refrigerated under Vinloq Preservation
DAY24
There is a lot going on with this wine. Nitrates, salty, citrus,
mint, minerality. Savory for sure. Silky texture
My first Wolfram Stempel wine. Clearly riesling but unique. Very enjoyable & impressively crafted
More cohesive on DAY24 after "slow decanting" with Vinloq
Time will be kind to this wine. I believe it will only improve
with bottle age👍

April 20, 2022 - Glassware: Zalto Universal
Prep: Pop n' pour, followed over 3 days
The nose on this is incredible and unique. So herbal. Has this dusting of fennel and spearmint with undulating waves of greengage and fresh-cut herbs. Creamy on the palate, yet deep and focused with a core of smoke and graphite minerality. A little apricot fruit peeks through on the palate, but not much other fruit. This all savory and mineral.1 person found this helpful Comment -

March 16, 2022 - A lovely and contemplative wine. The aromatics grab your attention immediately. It's feels like Navi popped up, belting out her popular cry, "Hey! Listen!" Bright, floral and herbal; what an incredibly complex nose. Lime peel, carambola, gorse, frankincense, barnacles, juniper berries, cardamon seeds, cassia bark. The palate was quite reticent at first, with a rather thin finish. Navi howls again. 90 minutes in the decanter drastically improved it it. Racy citrus and green fruits lead the way to an expansive, angular and textural mid-palate with tons of grip. Precise and clear cut, yet incredibly distinct. Ceci n'est pas une riesling du Moselle. A lovely and contemplative wine.
