Community Tasting Notes 3

September 7, 2023 - The thing that really sticks out is the length of the finish. Really great and satisfying with that special depth and spice evolution on the finish. A little green at first, but the depth/layers and energy is there upon opening.

Has that tell tale blood thickness as it opens, effortlessly balanced by sticky tannin and lovely acid to hold it so nicely. More floral, more 5 spice, more hoisin, less green.
Really starts to come together and show its multifaceted goodness with such harmony after an hour or so. More of everything, green has become brined dark olive, now more salty and spicy supported by the weight and length of the fruit, never heavy. Not oak spice, unmistakable burg spice.

Then comes the soft red and black plums and texture. Deep, multilayered spice. Bit of fresh paint, turning more wonderful. Violets. Cured red meat. Raspberry. No generic Oregon cherry chalk soil.

Good times. Quite a surprise this.

Top end Jadot takes forever to come around (Ursules), entry level Jadot is just bleh flabby booze juice, this is a truly special village level, drinking fantastic right now.
