This one baffles me a bit, there is a good bit of sweet orchard fruit, but on top of it is a good chunk of acid and a strange almost sourdough note (but not in a completely negative connotation). It’s funky, certainly unique, just not very enjoyable for my taste. I’ve only enjoyed one Bistrøtage wine (the rose), this also doesn’t really do it for me.
  
  Edit: should have given it more time to breathe.x with air the weirdness dies down and the ripe Pinot-ness pushes through hard. Still not 100% for me, but can see how others would enjoy it

  Vinifisering pa franske eikefat (50%) og staltank (50%). Ingen dosage; verken sukker eller sulfitt tilsatt under omkorking.
  
  Tappet pa flaske: 31.08.2015 og : gogget 09.12.2020
  
  Alkohol: 12.0 % vol., Syre: 5.7 g/l og Sukker: greater than 3.0 g/l.
  
  Dyp og klar gyllen farge med tendens til lys rosa til rdlige refleksjoner
  
  Klart oksidativ med duft av modne epler og nedfallsfrukt, sitrus, mineraler, roser samt vanilje, jordlig- og gryende aldrings-toner og med et hint av honning og kjeks pa nesen. Litt naturvin-preg over seg som stall og fjs, men dette blases bort etter en liten stund i glasset.
  
  Rik og konsentrert munnflelse, stor dybde og kompleksitet av mineralet og jordlige toner som leire, kalkstein og overmoden frukt. En lang avslutning med fortsatt mineralsk ettersmak. Skarpe sprudlende bobler, men kanskje litt for ung og tff syre, som sikkert vil balansere bedre etter 1 til 2 ars tid.

  August 14, 2021 - On first taste, I immediately thought of a less complex Les Maillons. Light golden appearance. Light aromas of apricot, yellow orchard fruit, and honey. Similar flavors, moderate strength, with a touch of bread and some cherry that appeared 30 minutes. A touch of richness. Medium body. Moderate complexity/finish. Enjoyable. Seems like this is young and need a couole years for the aromas and depth to develop. 91-93.
