April 10, 2024 - Blend of free-run Cab Sav, Ca Franc, and Petit Verdot, aged 22 months in 100% new French oak.
Opaque ruby color, offers aromatic contrast between dark, savory cherry fruit, chargrill and graphite, and top notes of green pepper and rose petals.
The palate explodes with detailed flavors and its tannins are already resolved and chocolaty, with seamless acidity and exotic spicy layers emerging on the extended finish. Wow!

January 20, 2024 - Corvined a glass to try. 20 minutes in the glass. Sweet cinnamon plums on the nose. Pallet of cassia, bell pepper and a hint of raspberries and spice. Really nice mouthfeel and long finish. Very smooth with almost no tannins. Don't have any idea about where this might go with further aging but it is drinking very well right now and, at least for me, nothing seems to suggest that this needs more cellar time. 93-94

January 12, 2024 - Good wine. The best Paso cab I've had. Balanced with fruit and structure. Drinking well young but could easily hold this for many years.

December 25, 2023 - Beautiful. Deep color. Great with the steak dinner we served at. Simply and exceptional wine. Decant for an hour or two. Incredibly delicious.

Food Pairing

Community Recommendations

Cabernet Sauvignon was made to pair with red meats. The key to Cabernet Sauvignon food pairing is to consider the tannins. Tannins need protein to break down. Cabernet has high tannins and pair best with fat rich meats that are protein rich. Cab’s fruity, Grana Padano and Pecorino will also pair well. Cabernet Sauvignon is almost always aged in oak, lamb and meaty pasta dishes. Rich wines like Cabernet Sauvignon need savory cheeses full of flavor that can stand up to the tannins and structure in the wine. Aged cheddar, Manchego, Parmigiano-Reggiano, which softens the wine and makes it pleasant to drink together with food.
