    June 30, 2021 - The wine is clear, with pale lemon color, and watery rims.
    On the nose the wine is clean, with medium plus aroma intensity of ripe white fruits, peach, pear, melon, ripe tropical fruits, banana, pineapple, sweet oak spices, vanilla, green apple, mineral notes, and white flowers.
    On the palate the wine dry, with medium plus acidity, medium body, medium plus alcohol, medium plus flavors of ripe banana, peach, melon, pineapple, earthiness notes, hints of oak spices, vanilla, green apple, lemon, grapefruit, mineral notes, white flowers, chamomile leaves.
    The wine is of an excellent quality, due to its long finish, balanced fresh acidity, and complex aromas and flavors profile. It is appealing and enjoyable at time of tasting, but also quite youthful, with green notes, which can benefit from further aging.

    June 30, 2021 - Tasting Ground official tasting, Richard Kershaw part 2 : 2018 Chardonnay (Oinoscent): 100% Chardonnay made from Dijon clone CY95.
    WINEMAKING: Grapes were hand-picked on an early autumnal morning, placed into small lug baskets and tipped directly into a press before being gently whole-bunch pressed up to a maximum of 0.6 bar or until a low juice recovery of 615 litres per ton was obtained using our new Willmes Sigma 5 Press. The juice gravity-flowed directly to barrel (no pumps were used at all) without settling.The unclarified juice had no enzymes or yeast added to it and therefore underwent spontaneous fermentation until dry, with malolactic discouraged. The wine rested in barrel for 4 months prior to judicious sulphuring and a further 7 months’ maturation in barrel before racking and bottling.

    BARREL SELECTION: A small number of artisanal coopers were selected, all from Burgundy and only French oak was chosen. Importantly, this wine was micro vinified as a separate batch. Over the years we have developed an algorithm to ascertain which coopers work best and how many new and used barrels are utilised. In 2018, 49% was new oak; 100% using 228 litre barrels.

    The wine shows old world funk and depth in the nose, the oak is a bit fresh still, showing spice, butter and essence.
    In the palate, the wine is an iron fist with a glove, depth, serious, high acidity, citrus, lime, saline too, smoke, toast, medium to long finish.
    Elegant and ethereal, very fresh
