    April 28, 2022 - Made with apples sourced from AOP Cotentin, composed of 25 different cultivars. The apples are pulped, the juice is left to macerate with the pulp and then left to settle and clarify naturally over 3-5 days. Fermented slowly over 4-7 months, then bottled with still some residual sugar remaining in order to produce the carbonation. 5,5% alcohol, 30 g/l residual sugar, 5,1 g/l acidity.

    Luminous, pale golden yellow color. At first the nose feels rather stuffy with a noticeable streak of flatulent reduction, but slowly the nose clears up, revealing juicy and funky aromas of almost overripe apples, some bretty barnyardy notes, a little bit of horse stable floor, light notes of hay and a sweet hint of white fruit. The cider feels noticeably dry and rather robust on the palate with a strong streak of bretty barnyard funk followed by notes of hay, some apple peel bitterness, a little bit of saddle leather, light juicy notes of overripe apple, a hint of pithy citrus fruits and a touch of phenolic spice. The cider is quite high in acidity with a tiny bit of tannic grip, lending it a slightly angular feel. The finish is dry, robust and very gently grippy with somewhat rustic flavors of apple peel bitterness, some leathery notes of brett, a little bit of barnyardy funk, light freshly pressed apple juice notes, a hint of hay and a touch of steely minerality.

    An enjoyably robust, dry and rustic cider that stands in start contrast to the sweet, fruity and accessible modern ciders. It's obvious this is not meant to be a crowdpleaser and that's where the strengths of this cider lie - it is characterful, complex and structure, not only making it much more interesting to drink, but also work better with different kinds of dishes. This is still a rather young and angular effort and I have no doubts this could actually continue to improve for some years in a cellar. Not the most affordable cider at 22,90€ for a 0,75-liter bottle in a bar, but delivers for the quality. At 14,53€ in retail, this is pretty much priced according to its quality.
