    February 20, 2023 - Decanted for four hours. Merlot is very noticable to me, in a good way. Much smoother than other Cahors I’ve had. Tannins and acid are there but well balanced. A bit of citric tartness which I can quite place. Went well with duck breast in a juniper black pepper crust.
