July 29, 2023 - Belated birthday wine session at Wimborne. Drank in Gabriel Standart.
Appearance is clear, medium intensity, rusty red gold colour. Thin legs. Fast fading bubbles.
Nose medium+ intensity, with aromas of caramel, integrated toasty oak, nutty brioche, roasted brown rice, vinous red cherry plums and red apples. Developed.
On the palate, dry, medium+ acidity, medium- alcohol (12.5%), full body. Medium+ flavour intensity, with flavours of sweet caramel, toasty oak, nutty brioche, vinous red cherries, plums, red apples, mushrooms emerged with more air. Long finish.
Excellent quality. Very very complex, both the nose and palate. Drinking at peak.
80% Chardonnay and 20% Pinot Noir. -

April 4, 2022 - Dinner at S.K.Y. (S.K.Y. restaurant, Pilsen, Chicago IL): This is showing some age to the nose, but I also feel like my palate has well shifted away from aged champagne. It shows off good depth with buttered toast, bruised apples, cinnamon, biscuits, dough, spiced pears, quince, nougat, vanilla, and some oxidative notes. The Medium bodied feel is balanced but also leans into the more aged aspects of the nose while there is still ample, high acidity that has integrated very well. For me, this may be slightly past it’s peak. For those that want something with more age on it, it’s right in that zone. It’s a choose your own adventure here.

August 2009 (link)(Dom Pérignon Rosé) This is 80% Chardonnay and 20% Pinot Noir, with most of the Pinot coming from the south-facing vineyards of Aÿ. Light salmon-gold, with a delicate perfume of red berries, lemon, and rose petal, the wine is medium-bodied on the palate; brioche-like autolytic notes complement the bright berry fruit, soft floral notes, and fresh, lemony acidity.
