    May 5, 2024 - Decanted and let aerate for 60 min. Agree with previous tasting note. Not fully balanced yet, would let it sit for 2 more years and try again. It's coming along though. Lots of punchy tannins and acid before you get to the earthiness / truffle which is a trademark of this producer. After 1.5hrs more flint was apparent. Also a touch thin on the mouth feel it was light-medium bodied for me. Paired with filet mignon at Pastis.
