    December 12, 2018 - So this is definitely showing more age than you might expect given it's age, but that's not a bad thing since I like aged champagnes. The bubbles have pretty well faded. There's nice caramel notes. Oxidation definitely there. Some toast. Not something I'd proactively seek out, but a decent set of bubbles.

    November 17, 2018 - Quite disappointing there where some bubbles left and the wine itself was more or less oxidized. I did not like it 5 years ago, but this one was really bad. Some nutty aromas but nothing else, no structure, no balance. Goes into the risotto.

    December 7, 2016 - Huge improvement over the past 5 years. Tart apple, citrus, and an interesting but well integrated marzipan. Nice body.

    September 19, 2015 - After reading previous tasting notes, I see I also had a bottle of sparkling Sherry.

    Very light colour, no visual hint of oxidation. Minimal to moderate bead with a slightly weak mouthfeel/mousse. First sip was predominately sherry though this blew off substantially as the night wore on. Mushroom and lemon aromas with sherry notes; honeyed fruit flavors with some sherry and cinnamon.

    Overall not bad and very drinkable. We had the very nice sommelier (Kelly?) at the Water Grill Santa Monica try the wine and she concurred "... sherry..."
