    Prep: Pop n’ pour

    Notes of grapefruit peel, orange blossom, white strawberry, lemongrass, and wild yeast on the nose. On the palate there is an attack of dry slate minerality with an undertow of citrus fruit (grapefruit, orange pith) and a touch of apricot. Creamy but light on the palate, not particularly mouthcoating in its minerality or acidity.

    February 11, 2023 - This really opened up over two hours and is showing much more approchably than I expected from the vintage. In fact, I’ve had feinherbs in the past that came across as much more acidic. That’s all perception of course. The numbers here may be higher, but there may be something to all the “dry extract” discourse.

    Do you know those pink grapefruit in syrup cups you can buy at Costco? Imagine that flavor profile dialed down a bit. Add some citrus and a lot of salty minerality. Perfume with white and yellow flowers. The finish turns all of that into a long but almost out of reach hint of pineapple and lemon. From the attack to the finish, you perceive the incredible acidity but it somehow never takes over. This really must have been picked at precisely the right time.

    This might merit a higher score in time and, unless I’m very wrong, likely could age gracefully for at least 30 years.
