February 16, 2024 - D-E Defaix's Chablis age beautifully and this has a good balance of ripeness, acidity and length. Certainly ready and I'd drink over the next couple of years. his is better than the 2009 drunk a year ago.

    February 3, 2024 - Color: medium gold
Nose: lemon zest, peach and pear hints; acacia flowers, something nutty, seashells and ocean, canned pineapple
Palate: medium-high acidity, medium body, this wine is in impeccable balance. The aromas are confirmed with the ocean notes coming out fairly strongly. The wine feels salty and bring, with a pretty dense texture
    Finish: medium

This is in my view smack in window, and will probably stay there a while more. I think this wine shows best with 2 hours or more of air in large decanter, notes keep surfacing even well after that. Refined and balanced, this would be fantastic with raw seafood, but it could work with something like chicken even. Honestly it's a great sipping piece too.

January 7, 2024 - Did not decant. The nose is fairly muted. It’s subtle and elegant on the palate with lemon and mineral. The finish was short, which leads me to say this wine should be consumed. It was good overall, but I have a few more to drink in the near term.

    November 16, 2023 - (WSET 4 tasting note)

    Appearance: Clear, medium lemon green

Nose: Clean, medium intense. Yellow apple, lemon, butter, vanilla, yoghurt, honeysuckle, elderflower, passion fruit, liquorice.

Palate: Dry, medium acidity, medium alcohol, medium body, medium+ finish.
Yellow apple, lemon, butter, vanilla, yoghurt, honeysuckle, elderflower, passion fruit, liquorice, peach, melon.

This is a very good quality wine. There is an abundance of primary fruit, secondary aromas and acidity all very well balanced. Although there are not tertiary flavours present, these could yet develop from this fruit and acidity.

This wine is suitable for bottle ageing; it has enough primary fruit and acidity to age well.
