Aromatic nose of pear and beeswax, but palate was relatively more muted for the most of the bottle. The finish stayed short throughout so it was interesting to try, but I probably wouldn't buy it again (not that you could anyways).

    October 28, 2023 - 30 min after opening. Hazy gold color. Aromas of just ripe pears, ginger, a bit of beeswax, medicinal herbs, bark. Palate w just ripe pears, mild tannins, some ginger and beeswax, medicinal herbs. Good acids on a medium body. Short finish. Not the most complex but still tasty.

    February 18, 2023 - No gas to taste, yet there is a smoky pop when the reseal was broken after 24 hours. Turbid peach-silver to look at. Aromatic. Scented earthy, of milled crabapples, hung herbs, and ginger. Palmolive. The sweetness is stained into the tannins. Flavors of preserved lemon, pottery, and confectionary starch pause intermittently to allow isolated expressions of tamarind, sumac, and dried blueberries. Course mineral structure finishes on an appetizing, oily, bitter note. It adjusts well and I find myself happily draining the bottle as it approaches 60°F.

    February 10, 2023 - I had a bottle of this about 3 months ago and I was looking forward to opening another. This is such a unique wine coming from Julian Haart. A real departure from the style of wines that has made him famous. I think that is one of the reasons that I like this wine. I appreciate that Julian was willing to think outside the box and make something different. I feel like the experiment paid off and we have this single release to enjoy as part of Julian’s journey.
    This reminded me of a super dry apple cider with notes of beeswax and the tannins of apple skin. It has a great purity and mineral clarity. There was a delicious ginger spiced mineral water thing going on that makes this so easy to drink.

    January 26, 2023 - Floral and pretty nose with lots of citrus and mineral notes. Good acidity and generally quite light on the palate. It's not crazy complex, but offers interesting citrus and lime zest notes, along with a crushed rocks. Good finish. Lovely wine, really crushable and not too serious.
