    August 20, 2023 - Bottle 1362g. Briefly decanted. Aromas of moderate intensity, red fruit, black fruit, herbs, dark earth, a whiff of wood and varnish. Dry, with elevated piquant acidity, elevated grippy, grainy tannins, full-bodied, 14.5 abv. Still very youthful. Hell, I'll put it back in the bottle and try it again tomorrow.
    Day 2: Aromas more open, smells savory, salty and earthy, but less fruity. Tannins seem a bit smoother but still grippy, and the acidity better integrated. Savory, dark and somehow rich; the alcohol is not obvious.
